Second the i875p Is the canterwood which is a little faster The i865p is the springdale which is a little slower but less $$.
Ill list the good ones i know off the top of my head.
I875p:
ASUS P4C800 the fastest of the mobos but around $178
ABIT IC7: great fast very stable priced at $129
Gigabyte GA-8IK1100 What i use: $147
Those are the best ones for canterwood. they all support 800mhz fronside bus and dual channel.
now I865p
ABIT IS7-E very fast and super overclocker. $99
ASUS P4P800 i865PE Faster than some canterwoods. $115
Gigabyte GA-8IPE1000Pro very stable but not that fast: $110
they all support 800mhz bus and dual channel.
All of those are fine mobos. Dual channel works like this. If you have 1 stick installed, the memory is stored at its normal bandwith. same as if you had 2 sticks. Dual channel motherboards splits the data between the 2 sticks of ram making the bandwith effectively double. but you need 2 of THE EXACT SAME RAM STICKS. any other questions?
