OK I think I overthought this a bit, but here goes:

Appearance: Shiva. I know everybody's all jazzed about Garuda, but I think Shiva has an elegance about her and Garuda just falls short. (In real life, I'm a heterosexual female, by the way.. )

Functionality for solo experience: Ifrit. He's got a bad rap all around from a lot of summoners because he doesn't have many blood pacts that are useful in PTs, but after 70, he rocks for solo.

Functionality for soloing things that don't give experience (farming, etc): Carbuncle, just because he's free

Functionality for supporting a PT: Titan. You really just can't beat stoneskin in today's ninja main, ninja sub world.

Functionality for endgame group battle play (including HNM, Dynamis, etc, etc): That would be a dead tie between Leviathan and Diabolos, in my opinion. Leviathan for obvious reasons (Spinning Dive, duh) and Diabolos for his never-miss (but less damaging) Nether Blast and also for buffing black mages with Dream Shroud.

Sorry Garuda lovers... She just doesn't make my list.

looks: Shiva, as mentioned above, she's very elegant looking. I thought she was designed the best.

Effects: Ramuh....the graphics of his BP's are stunning. his two hour looks the coolest, IMO

Functionality: Probably fenrir, leviathan, or titan. i think the reasons are obvious.

Overall: MY CHOICE IS FOR SHIVA!

Since I was asked to pick an overall favorite, even though it's REALLY hard to do, I'm going to go with Ifrit. Not only is he incredibly functional for solo play, he's pretty badass looking too.
