I finally beat Maat today on my third try.
My experience with Maat is that beating him is all skill with no luck.
The day of the week does not matter. I did on Firesday and Windday, Aero3 damage was 358 every time. I did not notice any difference in the damage his spells dealt, or resist rate. So go on any day you want.
My strategy:
Rolanberry pie, protect4, shell4, haste, baraero, blink, stoneskin, phalanx, aquaveil, refresh at the start. Used mulsum to recover my mp.
Cast Diaga on him at the very start. Then I cast a dispel on him as he ran towards me. After I cast it, I ran away from him until the recast for Dispel had passed then recast it on him. Repeated this until Blink and Stoneskin were taken off, then put him to sleep. (He will not wake up from the Dia because he has stoneskin on, and dia will most likely run out by the time his stoneskin comes off)
I recast blink and stoneskin, cast dispel until he woke up. Repeated this until Shell came off. Then I would wake him up with an aero3.
After that, I would run around until the recast on aero3 was back, cast it on him. Put him to sleep when blink and stoneskin came off.
At one point, I ran out of mp so I put him to sleep, cast blink stoneskin and converted, two cure IVs, ran to a slight distance from him and cast aero3.
When you wake him up with aero3, he usually tries to cast a spell on you. I avoided this by running outside the range of the spell.
At around three aero3's I activated chainspell blink stoneskin and blasted him with aero3s. In the middle of it he also activated chainspell, but you should be able to kill him before he can kill you.
I had a macro set for vile elixir and vile elixir+1 and used them when I needed to. I ended up using both of them.
My equipment (switching between them constantly for the best combination for any one spell)

With this his resist rate on sleep was less than 20%. I could more or less count on him falling asleep when I wanted him to. Gravity and Silence will always be resisted.
His spells did 120~240 damage to me. My aero3s did 358 damage per blast.
I did not engage him hand to hand at any point. I just cast my spell and ran away. 7 aero3s for 2506 damage got him to give up. I think you need to use both convert and chainspell in order to win. To be honest Convert seemed like more of a liability than a benefit. So I used it early to get rid of it.
It will probably take more than one try due to forgetting things, I had a hard time keeping calm and not get nervous. My first try I forgot to cast blink stoneskin phalanx, so I died rather quickly. My second try I forgot to use chainspell.
The most important thing is to just stay calm no matter what.
