Keep in mind your frist sjob will be one of the main 6-
MNK WAR WHM BLM RDM THF
You'll get the ability to add a second, subjob, once you do a quest and attainlevel 18. YOu'll get access to the quests to unlock the rest of the jobs at level 30. Some of them may not be easy to unlock without help from higher-level players.
Of the main 6, WAR and WHM are most commonly used as subjobs. THF is rarely subbed by some melee jobs, mostly once they reach level 60. RDM is subbed by BLM's sometimes, BLM is subbed by RDM's frequently. MNK is only subbed at low levels by WAR's and I guess maybe by PUP's also.
So if you're interested in playing MNK, I'd start as MNK > level 18, WAR/MNK > level 37, MNK/WAR > level 75. You'll also probably want to take NIN 37 and WHM to 37 towards the end of your MNK career.
