Probably varies a bit server to server. On mine, tanks are not rare at all. After level 40, PAL is the most common melee job on my server by a good margin, significantly higher than DRK, DRG, THF, MNK, etc..
Besides pure support i'd say by far the most sought after is BLM. If you need heavy magic damage there really is no substitute, and he has an excellent set of emergency spells.
Beyond that nobody is guaranteed to be in a group. I see a slight preference to the "money" classes, Ninja & Ranger. Those are the only 2 weapon classes i've played where i keep getting random invites with Party Seek flag off.
