Ok, going over to my dad's and I'm going to install FFXI there. Now, my friend has my NA CoP discs so I wont be able to install CoP tonight. Is it possible just to install FFXI/RoZ and play even though I have already done mulitple CoP missions?

Yeah, it should be possible. Generally what the expansions give is the layout data and mission data for the new zones. I would recomend not tempting fate though and going to a zone that is part of CoP, being registered to have the expansion and going without the files installed might crash you out or do who knows what.
