How do you take screenshots or shoot movies of FFXI on the PS2 version?

No clue on videos.

But you hold R2, then click R1 to get a screenshot.

There is no way to "shoot movies" on the PS2 version. The only thing you can do is output the PS2 to a VCR and record it. After recording, capture the video into your PC thru a video capture board, edit it, and make a movie. You can also go direct from PS2 to your PC capture card so you can leave the outputting to VCR part out.
