Early on it seems theres some uber good stuff to be gettin in freshwater... Moat carp seem to be the biggest profit. But then again, you get the sabiki rig (which doesn't like freshwater) for saltwater, so you get more in at a time. So my question is -- which is better early on?? What rods, and what bait is the best for the most profitable outcome around windurst?

There is no such thing as "profit" at early levels. You make make a couple gils here and there, but the profit margin is so low at low level fishing, that farming crystals would get you more. In fac,t I lost money from low level fishing. There are tons of fishing advice and guides scattered throughout the forums. There is a search button availible on this forum which is a good place to start.
What I can recall getting the best skill points was at windurst walls I beleive. Just remember to bring a lot of spare rods and use earthworms. Yea I know a lot of people oppose using earthworms, but they're like 2 gils a piece so it's very cheap to raise your fishing skill to lvl 4 or 5 easily. Rods do get quite expensive after breaking 10+ of them, so what I do is hunt goblin fishers. They drop bamboo rods and yew rods. If you have a thf, you can occasionally steal willow rods from them too. Bunch of goblin fishers in the emphemere in la thiene.

Best drop I got from Gob Fisher has been the Bamboo Rod.
So far I've gone through :
2 Willow Rods ( first two cast at fishing )
broken in the moat of Bastok Markets
1 Glass Fiber Rod (after long time of fishing)
caught many Crayfish with this and Little Worms
broken finally while fishing Copper Frogs in Bastok Mine sewer using a Fly Lure
1 Fastwater Fishing Rod (very fast in breaking for me)
broke catching Quus and Bastore Sardines using the Sabiki Rig

1 Carbon Fishing Rod (fished quite awhile)
broke catching Quus and Bastore Sardines using the Sabiki Rig
-sometimes you get some Jellyfish ... can't remember what it was called

right now I'm still doing Quus and Bastore Sardines with the same setup as above w/ Carbon Rod ... The quus sell well, but the Bastore Sardines .. that's a totally different story .. I have so many, its not even funny .... I'm lvl 7 Fishing now, I might start doing Carps soon ... but I don't know if I want to give up the :

Also : Wanted to know .. for those of you who are fishing Moat Carp, is there a Lure I can use ? instead of having to keep buying little worms .. which can get expensive in Bastok ..
