It doesn't matter that "all" other mmo- do it too. I understand that there are major differences between a single player game and an mmo-, but could you imagine a single player game being released in the state most mmo- are released stating "we will patch it"? There would be an uproar without proportion, and to be honest I am starting to get annoyed that if I want to play an mmo- and experience things not everone playing the game has already, experimenting with speccs etc I have to play a completely broken game.
Of course Funcom will patch and fix problems, but I played since day one and after one month there are still so many bugs and problems that your "one week" to fix things is a definite "not going to happen". You are not trying to tell anyone it is a perfect game and I am not saying you are, but you recommended someone else to play AoC and thus I just felt I had to point out that yes the game has potential, but as of right now it is very far from that point where it is actually a good and complete mmo-. There are bugs, class balance issues, content (I do agree that there is, relative to FFXI little grinding, but questing for exp is not the only thing I would refer to as content even though it is a part of it. I would say "working, cool and complete skills/feats" and items are a big part of it. There are far too few items and if you are lvl 80 you might as well quit, because there is very little to do. Very few instances at all lvls. Even promised minigames are still missing from the game) and many other things that are just annoying and will probably be changed having to do with, for example, the UI. And since you made the comparison to FFXI and grinding I just have to state that whilst FFXI is a grind 1-75 that is the way the game was designed, it "fits" the games profile so to speak, which is not the case in AoC, it wasn't meant to be that way, it just isn't complete enough.(Yet)
Like I said, I understand it is a mmo- and "we have to give them time", all I am saying is yes, like you said, healers can solo to 80 and do decent damage which while it is a good thing(At least to some) it does in no way change the fact that there are a lot of other things with that particular game that, depending on what you are looking for, won't be as good.
In the end, from my own point of view when it comes to AoC I would say it has potential, it will probably be really good, but it will take quite a while before it actually reaches that point. Also, the BIGGEST problem for me was basically the fact that I didn't feel I had any reason whatsoever to grind even a little in that game because as the end of the day I didn't feel there was any reason to reach lvl 80 and I know there are many in the same boat as me. There were no feats I wanted, no spells, no items, no amazing big instances. Like I said, it will most likely come, but it isn't there yet and it won't be for quite a while.

AoC's quest are a lot like FFXI's. They actually have nice, in-depth storylines. The main difference though, is that they actually give you EXP. In FFXI, you grind from 1-75. In AoC, you grind 35-40 and 50-65. Considering the game JUST came out and they are already adding new zones, I wouldn't say that is to bad. I won't try and tell anyone it is perfect, but it is by FAR the smoothest MMO launch I have ever played. Did you see WoW at lauch? Holy crap... don't even get me started on the problems THAT had.
Also: Age of Conan is the only game I have played to-date that actually gives an explanation for why you respawn every time you die. I imagine FFXI has something to do with the crystal's power in your character, but it never really explains it. WoW has no explanation at all, nor does LotRO, Runescape, or many others. | LOTRO doesnt have an explanation? woah wait a sec there bud XD
You DONT die in LOTRO , you lose morale which is the will to fight.
in lotro theres no magical healers, theres Bards or Minstrels that make your will to fight (in this case morale ) grow strong with their special songs but no *POOF MAGICAL HEAL FOR U DUD*

Also to everyone who is thinking about buying AoC dont buy it.
its crap, it might have great graphics but sadly its an unfinished game.

I've played both games. I have a 40m SP character on EvE Online and was part of 3 majorly huge alliances since 2004. EvE Online is indeed a great game, but to tell someone who clearly doesn't like waiting (or finding things to do .ie sand box) to play EvE is suicide.
First off, EvE is a sandbox game. You aren't told what to do, you find what you want to do. And when you do find your own little haven, you're being chased by a group of angry reds. XI is PvE, WoW is PvE with carebear PvP, EvE Online has little to no PvE with hardcore PvP with huge losses.
Age of Conan? Give me a break, I got to 80 in two weeks as a ToS. I started as a Conq, and heard ToS were overpowered. So I went off and tried one: soloing mobs 4+ my level (multiples, not single soloing) was something my conq never could do. Balance issues fixed in a week? Bull shit.
And smooth launch?! The traders/bankers/etc. were broken for a week. After 3 years away from FF11 im pretty sure parties out there are hard to find but if you still have friends or old friends currently still playing this game then it might be a little easier. And i dont think its ever taken me more than an hour to seek/create my own party. And if it EVER does.. I have a friend on that we just duo whatever we want or go off and do any random quests we can find together.
But i think you DO need lots of time to play cause oh sure you got a party ni 30 mins but man... now you gotta get off in 40 mins and your party cant get anyone to rep you and its all dissapointing and they gotta disband cause 5 people might not make it in the area your partying in.and in addition to that your 40~ mins of partying got you one death and only 1 level. Your not getting much of anywhere at that rate. you need time to be able to get multiple levels in one party. then when you dont want to party you need hours+ to do the mission you want to do. you might have to assemble a partry for that mission. then you gotta get to where you want/need to be. that can all take a while. Its a time consuming game. Its definetly worth it though if you can play it.maybe youhave 3+ hours to play on the weekend.. well that works just dont expect to make a friend in a party and then next weekend party again with them. They might be like 5 levels about you by then.  I like pie........no seriously.. i do. Das Oldskoolen

Proof that AOC's own community is bashing the hell out of it which is not only sad, but is just downright embarrassing for Funcom.
Here's another informative suggestion, google the words - failed MMO launch - and look in wonder as the entire search will be AOC related posts from many different forums across the web.
