I traded them to him, got the 'zomg thank you' reply, and somepage says he'll be gone for awhile. So I switch to my level 1 BLU and head to Gustaberg to start learning spells, come back like 5 hours later and he's still there, with same safe. So has he not left yet(probably this one), or is this just some random glitch?

I know I've seen reports that indicate it sometimes takes more than a few hours - sometimes more than a day.

I've completed all three and a couple on my mules. He has never been missing from my Mog House. I think he "goes away" while you are out adventuring and/or logged out.
It could be that you have to wait for JP midnight, that's pretty common in quests. Haggai
