You won't be able to hit anything, you can't take hits from enemies at that level (well unless you used Invincible), but you could still cast Cures and Raises. That's about it, though.
If you don't fancy being a glorified healer in heavy armor, don't do Besieged on Paladin at that level.

You can run around healing and if you get hate you can take damage better then a regular healer. I take way less damage as WHM75 than a level 50 Paladin (unless he has invincible up). You should be able to handle just about anything else they throw at you unless you have TONs of hate, which as a Paladin you should know how to manage(It's your job after all!). Also, if you're good at kiting, you can be useful in Besieged at almost any level. Also mentioned you can cure and raise as was said before. Buff up your party with some Protects, cast some cures, and Raise people. And if you die, it's not such a terrible thing because there's no xp loss. Anyone who says it's stupid for you to suck up raises is a jerk, level 75s can suck up as many raises as the rest of us.

Icemage | Hmm... I'm not sure if I was that low when I started Besieged but don't say it can't be done. I do it all the time and if I do get hit I usually dont die. Plus Reraise isn't much of an issue seeing as 5 people are there to raise you when you die. I was taking issue with your assertion that a level 50 PLD will take less damage than a level 75 mage, which just isn't true.

As far as tanking, that's certainly out of the question until at least the 70s. I'm not even sure tanking is possible in besieged. i don't know much about it all as i'm only just approaching 50 (very slowly), but it's just a thought. Basic rule in besieged is if you have at least Cure III and Raise, you are useful.
Last night was pretty fun, though. I was in an Undead Swarm Besieged as BLM63/WHM31 with my WAR62 friend. We were chasing around whacking on Lamia No. 9's elementals. They were the only things we could do damage to! Between the two of us, we eventually took out one of her Ice Elementals. I'd cast the occasional Fire 3 for kicks. I did get some nice Aspirs, though. The funniest thing was that we could whack and whack and the elemental never bothered us much, it just kept following Lamia No. 9 around.
The best part is when you get charmed and you start attacking another person. I just hope I never get attacked by a WAR75 while he's charmed. >< Haggai
