At this point, it's more expensive than just buying a used 360 and a new copy of FFXI or a new PC and a copy of the Vana'diel collection.
As for a wireless adapter, you'll have to get a wifi bridge to connect it to a console, which last I checked (awhile ago, I admit) was around 50-80$

Not a lot use VoIP, but some do.
Busiest server: Probably bahamut now, but it doesn't matter, more players isn't always better in FFXI.

I'd recommend reading through the reviews here http://www.newegg.com/Store/SubCateg...eless-Adapters before you buy an adapter.
PS2 accepts USB keyboards last I checked, i'm not sure about mice. You need to buy the game before you can create a character, it's pretty straight forward.
