The end of FFXI is when you realized you just spent months doing COP missions to get lolSea access and a crummy ring. ^^
Just kidding, I'd say you have beat FFXI only when you beat DL, all ground kings, kirin, AV, obtained 5/5 AF2 on one job, obtained relic weapon, cleared all limbus zones, cleared all assaults, beat carebear-us and lolHydra and wiped at least one alliance of RMTbots.

Since you first came into a world that already existed, would it not be logical to think that that same world, or whatever it has evolved into, will still be there after you leave?

Granted, there are several world-shattering events that take place as you adventure your way through this land, but surprises are the spice of life. Like the day you first met a gob/quad/yag on your level 2 character. The day you discovered that there are good and bad parties. The day you saw a player with some eye-catching power - raise, summons, pets, wyvern etc.

This goes on throughout the game, and more is being added. I feel as long as there is a fascinated player base, content will continue to add, and there's no end in sight.

Also, remember that when a player finally leaves for whatever reason, there are often new players coming in to replace them. Much like the real world, its a birth-death cycle, but the world continues regardless.

Why only one set or one relic? Gotta get em all!

Getting every single relic piece for every single job.

Getting every single job to 75.

Merit every single job to max.

Finish every damn quest.

Change citizenship and get every single nation mission completed.

Complete every single other mission.

Become Grand Master Chimpok-I mean Champion of Ballista and all cross server tournaments.

Getting every single HQ versions of Abjuration pieces.

Getting every single Rare and Rare/Ex item (LOLOLOL I dare anyone try this without discarding a single one - even if it means finding crafty ways of adding space via furniture and possible game glitches and the infamous Mog House Delivery Shuffle)

Beat every single NM. HQ variants included.

Unlock/Pick every kind of coffer/treasure chest in every zone.

Beat every BC type known to mankind.

Get every single craft to 100+3 (Go figure it out yourself Einstein!)

Create every single item imaginable.
