So I havent played in a really long time and, as of now, Im planning on grinding to 30 and getting paladin as soon as possible. Now, when i quit, it made sense to level warrior to 30 then get paladin, since /war was the only viable sub job, but now after reading the forums a bit it seems that /dnc or /blu or /nin may be viable also. My question is, should i take something else to 30 to get paladin, or does it still make the most sense to level war until i can unlock pally?

Level WAR. Any of those other subs are situational, but most of the time you will be using WAR. /NIN will be very important at endgame and you will want to have it at that point, but most XP tanking you're going to be doing will be with /WAR. It's a must-have for PLD.
Not only that, but you have to level one of the 6 original jobs to 30 just to unlock any of the other three, so you might as well make it WAR anyway.
You'll probably end up leveling a bunch of subjobs. Every job I've played has had different subjob options that are situational and based on the situation at hand.

Get to PLD75 on /WAR first, then worry about the rest. (That means getting WAR to Lv.37.) The two must have support jobs are /WAR and /NIN, and /NIN isn't too useful for tanking until PLD74.
In the order of importance (for now): /WAR > /NIN > /RDM > everything else. It's hard to say how important /DNC is at the moment, but it looks like it may become a option for PLD.

PLD/WAR is the priority ^^; It is the basic. The other subjobs are situational.
