Going to take a wild guess at this based on the subject:

A chocobo takes a certain amount of time to raise, and after a certain point is auto-retired. If you're returning after a long absence, you will almost certainly find that your chocobo has been forcibly retired, and you can still use it in the state its stats were in when you left it, but you can't do anything to affect it otherwise.

I don't think I've ever heard of a chocobo dying, though they do run away sometimes if neglected. From what I've heard, running away is only temporary.
