Okay, I have a quick question. How important is the age of a server? Some have been around longer than others. And for newer members, would it be better for them to try and join one of the newer servers or does it not really matter much?

It doesn't matter at all. And most all of the servers have been around for the entirety of the NA release, with the exception of Asura and Remora (I believe).
