I accepted this quest at the monastery and went out and got the 3 items needed which were:
Insect Wing
Two Leaf Mandragora Bud
Rabbit HideI have got all 3 but when I go to speak to they guy at the monastery he says the same thing as if I haven't got the items, do I need to do something else with the items or press something different to give him the items??
I also have the same problem giving a tail to the Onion squad, or something like that?
I'm lvl 5 if that helps and a complete n00b.

Target the NPC you want to give the items to, then open either the left side mini-menu or the right side main menu and select "Trade"
A trade window will appear with 8 slots in which you can place tradeable items.
Select the items you want to turn in to the NPC, then click or select OK to confirm the transaction. (This is also the same process you go through to trade with other players, except that the other player must do the same command before the trade window will open).

For the vast majority of quests/missions that take the form of "Bring me X amount of item Y", yes.
There are a few cases where the NPCs will auto-detect certain items in your inventory, but by and large if you want to show or give something to an NPC, use the Trade window (oh, and make sure it's an NPC and not a player - that can be confusing if you do it by accident :P ).

Big way to avoid this is a little knowledge. When you start a trade to an NPC, the trade screen will pop up immediately. Starting a trade to a player puts something like "You offer to trade with Haggai" in your chat log. The player has to go and hit trade also to bring up the trade screen.
If you hit trade and the screen doesn't come up right away, you've attempted to trade with a player. Just /say mistake (using autotranslate is best, as who knows what language they speak) and re-attempt to trade to the NPC.
