How I mine fish?
Seriously, Im trying to get into fishing but I cant find any explaination of the new system. I understand the whole left-right thing and depleting its stamina, but what about the messages you get? Also, is there a way to unhook a fish (say you get a bad message) without breaking the line (and losing my 3K rig)?

I believe just hitting ESC on the keyboard will accomplish that.
I'm still a novice fisherman, so I can't offer much else. I'm pretty sure someone will come along with more info.
Just don't try and pull up triple exclamation points or something. Those are monsters, I think? Or maybe items.
from my understanding, the 6 instinc messages are based on the fish VS the tolerance of the rod you're using. For example, Yew fishing rod can pull up moat carp with ease. So you get "good feeling" most of the times. On the other hand, if you hook a rusry subligar with Yew rod, you'll get bad feelings, or even terrible feeling. Because the subligar is way too heavy for Yew rod and has a high chance of breaking it.
3 feelings we considered "good." Altho the 3rd one doesn't sound that good... it is still good.
These messages usually mean small size fish, items, or even monsters are also indicated by these.
- You have a good feeling...
- You don't know if you have enough skill...
- You're fairly sure...
3 bad feelings. Usually will indicate a "big" size fish biting. Very heavy small fish and items can also give this message too.
Monsters normally won't give these messages except a few NMs.
- You are positive...
- You have a bad feeling ....
- You have a terrible feeling...

Three ! or a bad feelings without different music are rusty stuff, a fish too big for the rod you are using or just beyond your skill. ESC will cancel them. !!! with different music is a monster and you can not ESC out of that, just do nothing until you give up.
Other then that I would recommend using inexpensive bait that will catch what you are targeting until you get used to things and skill up your fishing a bit. Loosing a lot of lures gets very expensive quite quickly.
you can cancel monsters. Everything you don't want to pull up, you can esc them all.

Hmm I thought I recalled not being able to, but I haven't been fishing for a while.

Pressing ESC lets the fish or monster go. Lures can't be lost by ESC, but your bait (the piece on the hook) will be gone. Successfully pulling up items does not deplete your bait, but releasing (ESC) items will still result in lost bait.
The messages take a little time to interpret and you need to interpret them in combination with what you're targeting (rod/bait) and how the stamina depletes.
Monsters usually (always?) give "a good feeling" and "!!!". If you're aware how the normal "good feeling" fish' stamina depletes, you can tell the monster's stamina depletes differently and let them go. "Bad feelings" and "terrible feelings" aren't always bad. Usually they mean the fish or item can break the rod, but sometimes it just means the fish is *very* high level compared to the level of the angler. I get "bad feelings" from Gold Carp (cap 56) when I'm fishing with my skill 18 fisherman using the Hume Rod. The Gold Carp have never broken that rod, but it's a tough fight to reel them in.
"!!!" means it's a big fish or monster and you'll get the peppier fighting music. "!" means it's an item or small fish and you'll get the jingle music.
Fishing takes a bit of time, experience and observation like in real-life! Try a bunch of fishing spots until you find your favorites. I recommend using somewhat inexpensive rods and bait/lures until you get the hang of it (you'll lose some along the way). Also check out the fishing websites for what fish/items/monsters to expect in each area.
