Crystals will be your main income. If you started in Bastok head out in South Gustaberg and try to level off of Vultures because tehy drop fire crystals which will sell for the most. Don't know what drops fire crystals in the other 2 areas.

Get Signet cast on you buy one of the Gate Guards and then you will get Crystals dropped from certain enemies which sell for decent money.
Also enemies will drop all sorts of other sellable items.
Quests are also good.
It's not actually too hard to make money, it takes more patience than anything.

Unforutunately most of the information on what sells well will be different from server to server, and town to town, and the best way to find out is experience and research. For instance, people will usually tell you fire crystals are the best sellers, and they're usually right, but on Gilgamesh right now, Fire and Wind are about the same (2,000 gil for a stack), so take the time to find the best kinds of mobs to target. You might even want to check websites for lists of drops, especially rarer ones you might not know about. I level in Windurst most of the time, and my first time through, avoided crawlers like the plague because of their 40-100+ point damage poison.
Here's what I do in Windurst:
Kill Crawlers. Every crawler you can get your grubby little level 5 hands on. Yes, crawlers only drop earth crystals, but they also drop Silk Thread, Crawler Calticuli, and Smooth Stones. Silk goes for about 10,000-12,000 on most servers. Crawler Calticuli can be traded in in sets of three to an NPC in Windurst woods for 600 gil. Smooth Stones are for a quest in Windurst Waters, I think the reward is 100-200? You can only carry one Smooth Stone at a time, so it's not important.
Kill Vulture-type mobs for fire crystals, yes. You might also try selling the Bird Eggs they sell, but it's usually not worth it.
You'll get to a point where there aren't any of the above that still give you experience. By then you should be able to take Mandragoras and Bees. The income from these isn't as good as silk, but it's not going to hurt you. From bees, you want Beehive Chips. These are used for Alchemy, so the price in Windurst varies a lot, they can go for anywhere from 2500 to 4500 for a stack. Mandragoras can drop their leaves, or a rare drop, the Cornette. You can turn these in to a quest NPC for gil, but not enough to focus on since the Cornettes are a pretty rare drop, and you can only have one leaf in your inventory at the same time.
You'll find Goblins all over the place, most drop Fire Crystals, some (the armored ones) will drop lightning. The ones that drop fire crystals will also drop Wild Onions, it's a more common drop in the Horutoro Ruins, but the normal ones do it too. It can take a while to get a stack of these, but they do sell for around 5-6000 a stack. Some people focus on these, I don't, but they are valuable.
Then there's Yagudo. I left these for last because what you do with them depends on your server and your plans, and it's generally not an imediate return. Yagudo drop wind crystals, which, if not tied with fire like on Gilgamesh, are usually the second most expensive. However, they also drop Yagudo Necklaces. Since these don't stack, many (new) people just drop them, since they tend to eat your inventory space rather quickly. However, they can be used for one of two things. If you "Use" a Wind Crystal, then select a Yagudo Necklace and hit "ok"-- voila! Your first crafting attempt! Clothcrafting, to be precice. You'll get three grass threads (Which are stackable). Then you can use those three spools of grass thread with an Earth Crystal to make Grass Cloth. That is, of course, if you want to craft. But it's much easier on inventory space than the other possibility, and a stack of Cloth sells for a decent ammount (No quote on this right now, I never sell my cloth, since I craft)
The other thing you can do, with Yagudo Necklaces, is to trade them in in sets of four as part of the Mihgo's Amigo quest. I don't recall what the return on this is, if there is any, but more importantly, you get Norg fame-- this is one of I believe only two repeatable quests you can do to get Norg Fame. What is Norg Fame? Well, it's related to Ninja's, Samurai, and several high-return quests. But this is a very long-term investment, and if you do ever want Norg Fame (You'll be at least Level 30+), you'd probably find it easier to just go to Giddeus and farm them there. I only mention it for completeness.
That gets you about to level 10 in Windurst.
Now, if you read back over what I've said, you'll notice I named.... That's right. Every mob you can find in East and West Sarutabaruta
The truth is, everything that is dropped has value, some more than others (Silk Thread), but if you know what to do with all of it, it can add up quickly. When I re-started playing FFXI, the first class I leveled earned 20,000 gil (Not counting equipment), by level 10. I had 100,000 gil by the time I got my second class to 18, and by the time my Thief was 20, I had 200,000, which I promptly spent on a Garrison Tunica and Hose (100,000), Beetle Earrings +1 (18,000), Balance Rings (30,000), and now that I'm 25, I have a Federation Knife (40,000).
I have not yet seen another thief do more Sneak Attack Damage than me, and it's common for me to do double theirs. If I SA+Fast Blade, I typically hit 150, and I've done as much as 230 on an IT mob. Am I bragging? Maybe. But my point is, I have the best equipment for my Thief for my level (Sans Leaping Boots and an Emperor's Hairpin, of course), and I got it without even going out of my way to farm (Unless you count my leveling three classes to 18+ which was neccesary. War to sub under Thief, Monk to sub under War.)
So do some research for your area, and find out what'll make you the most gil.
In conclusion:
- Sell Crystals!
- Everything is valuable.
- Sell Stacks of items. Meaning also: Focus on a few items per leveling range.
- If something becomes overfarmed (And drops dramatically in price, both Saruta Cotton and Beehive chips did this while I was leveling 1-20), re-evaluate your hunting.
- Be patient. As long as you have enough for your equipment (And food if you can afford it), you're doing alright, and you'll get better with experience.
In truth, the early levels are the easiest to get money. Once you start grouping, your net gains from leveling will be effectively, 0. So you will have to spend time completely deficated to getting gil. Fortunately though, what you learn until then-- and more advanced means of getting gil will be available to you. NM's like Spiny Spipi may be your thing, or simply farming as you have been-- but much faster, since you'll be able to kill things in a few hits. Maybe you want to grow crystals. There are lots of ways to earn money in FFXI, and none of them are really secrets either, they just take work, and forethought.

Arknemesis27: You completely missed my point, but that's okay, I wasn't trying to one-up your magical gil-making strategy or whatever. I wasn't even saying that Windurst is the best, or anything like that. I was giving a very basic and general idea of how FFXI works, and how to make what you need while leveling. One can likely write up a list like that for any city. Yes, there are methods and quests you can make good money on in the early levels, that's not what my post was about.
Oh, and to correct myself, there is actually one mob in East/West Sarutabaruta I didn't mention. Rarabs. Forget Rarabs. They suck =P

Rabbits do suck.
If you're lazy and you're from bastok, just kill bubbling bernie all day. :) I make like 5-6k/hr after the purchase of the stack of quus from the ah (800-1200gil a stack). Being a 17BLM makes this very possible because of warp. You still get some xp off of him at 17, but I'm in it for the gil. ;)

Arknemesis: STFU, you know nothing. I know people that make 50 to 100k an hour, so just take that arrogant attitude of yours and stuff it.
Aiarin: Good write up, thanks for helping a new person out with a intelligent and thoughtful write up on how easy it is to make gil with time and patience.

1) There is no easy get rich quick method of making money in FFXI.
2) There are tons of threads in this forum with hundreds of different ways to make gil at any level. Just search for it, a.k.a., use the search function.
3) If you have lots of time to spend, fishing is a great money maker if you use it right. You can level up fishing and catch big fish, o you can stick to moat carp and sell the carp for 4000-5000 gil a stack. Get full fishing gear, a Carbon rod, and use insect paste. Any town has moat carp, and you can also fish Knight's Well in West Ron.
4) Crystals are a great starting gil maker. Fire crystals work great. From Sandy: In Ghelbsa Outpost, Orcs and Lizards. You can also get Dark crystals from the fungar in the caves. From Bastok: In the 2 areas right outside town, Birds and Lizards. Lizards can drop tails too which will sell to the alchemy crafters for something. From Windy: In Horotoru(sp?) Ruins, there's gobs that can drop Fire crystals(Lightning from the armoured ones) and sometimes Wild Onions(used to make Meat mithkabobs, 3000-4500 a stack). You can also try the cardians in Horotoru Ruins for Light crystals, but be careful because they link easily. There's also bees in Giddeus which drop wind crystals and beehive chips.
5) That so called "junk" that drops from most mobs earns me 30-50K extra every week by selling it on my one mule.
6) Be prepared to spend more time farming than anything else if you want to get anywhere in FFXI. You can always make farming more interesting by grabbing a friend to go along with you. At lower levels, you can duo easy prey for tons of crystal drops too. Just be sure to find a money making method you enjoy or you'll probably find yourself qutting FFXI pretty quick.
