Can someone explain to me how the classes work?

Everyone says you can only get advanced classes like sam or nin at level 30+, but I've seen while playing several multi-classed nin or sam characters who are well below lvl 30 in either class. Does this have something to do with sub classing? What exactly is subclassing and how is it used? What happens when you change classes using the moogle? Do all your stats change to that class and is it like starting a new character?

when you play, the job level IS your level. so if you play a warrior from level 1, up to 25 then you switch to theif. your thief will still be level 1 and so you need level 1 enemies to level your thief up.

now once you level your job to 30 or higher, that's when the NPC will give you the quest to obtain advance jobs such as ninja or samurai. once you complete the quest you will recieve those jobs, which will be level 1. so you need to level them from level 1.
