The "Hades" and "Remora" server have been introduced later than the other FFXI servers. In fact, right before the European release of the game. Which is why a lot of Europeans (and plenty of americans and japanese) players are on either of those servers. If you're european i'd definetely suggest the Hades server. 
Other than that (and if you really don't know anyone who plays this game as stated in a post above) it doesn't really matter. Maybe Bahamut server just to throw out a name. ^^

If you show up on a server where EU players are low, there are some aspects of the game, such as missions, that eventually become a major obstacle. I would know since I actually picked up two German players on my CoP Mission static, they really couldn't find much help elsewhere. Luckily, for them, they had times I could work with as an NA on EST time.
Low population servers tend to have players that are stubborn and will only level in certain EXP camps. They'll do this because the population is low and because they can, really. Larger servers, EXP camps become more diverse by neccessity since its easy to fill out the usual camps, so they're sometimes forced to go off the beaten path.
Higher population servers also tend to focus heavily on region-specialized linkshells. I used to be from Titan and a Japanese DRK would take any PT he could get since the population was lower, but you could take the same JP DRK on Odin and he'd insist on a "JP Only" PT because, quite frankly, he can and there are more JP players here on Odin.
So those are some things to consider, don't take it all to seriously, though. Because no matter what server you on, a linkshell with nice people to start out with is one of the best things you can have for your first few weeks, even months, on Final Fantasy XI.
