It says that it's a level 30 NM, is this meaning that I could take it with a group of 30's or is it that I'd be safe if I took a 30 Nin/Thf there?

It's labeled as level 30 probably because it gives the same amount of exp as a level 30 monster. Keep in mind that a Lv.30 NM is usually tougher than a normal Lv.30 monster of the same type.
