I know in the end it's my choice and I'm just going to have to find which one is my favorite, but I have a question or two.
My ideal character is basically the 'assassin' type character that dual wields daggers, but there really isn't an equivalent in ffxi... I looked into Ninja, but they're really best with a katana, and are supposed to be really expensive and a bit difficult to use.

It's worth the read.
Based on your description, Thief is probably the closest to your ideal. When subbing Ninja, they can dual wield daggers, and can unleash pretty awesome attacks with the use of Sneak Attack and Trick Attack.
But there is a lot to be said for many of the various jobs in FFXI, and you may find that something else really fits you well. I've got every job in the game unlocked, and while RDM is my first love, there is something fun about every job I've tried (all at least to 11). You can experiment with jobs to see which you like the best.
Also, since you can change your job at any time in the game, there's no real reason not to at least *try* a job if you're considering it, and you don't lose anything by trying. ^_^

Finding one job stale and uninteresting? Another job is waiting for you the moment you step into your mog house.
Of course, sometimes this is more curse than blessing when you realize you need to level multiple other jobs as support jobs for the one you most want to play, but that's a different issue altogether.

What FFXI calls "katanas" are really ninja-to and kunai and such. Real katanas are called Great Katanas.
Still, if it's an assassin feel you're shooting for, if it weren't for the sorry state of XP parties right now I'd say go Thief -- THF/NIN specifically, not just to dual-wield as you so enjoy but also for the protection of Utsusemi, which will come in handy when you pull mobs. Unfortunately, the current XP culture is not terribly THF-friendly -- it's degraded from merely largely mindless to almost universally mindless and lazy, when a THF needs a conscientious and cooperative party to work well. If you have confidence in your ability to make a party cooperate with you, though, try it anyway.
Ninja is an odd beast. While it was theoretically designed for damage dealing, it's not as good at that as it is at tanking. Thus, rather than trying to go around unseen, ninjas act as agile trick decoys. Well it sounds like one of the major factors of being brought into a party/the community easiest is to be a class that is needed by parties. I'll keep looking, and I'll read that link. As the author of that guide, allow me to highlight the most important portion: The short (and correct) answer is, "Try out a job to see if you like it or not." Sure, for a newbie, selecting a job which helps you get parties without too much of a fuss is good. It'd allow you to see what partying is like, and faster progression isn't a bad thing. However, the road to Lv.75 is long for any job, so you might as well pick the one you like best.
Don't be in too much of a rush, either. I enjoyed every job I tried but one; it's definitely worthwhile to give every job you try a chance.  “ I’m in pain, but I’m happy.”

RDMs are good with daggers, though, and daggers work well with the RDM's Enelement spells, and Dual Wield helps slightly in that regard as well, so you may very well enjoy soloing that way.
In general, in XP parties, mages have mage subjobs and non-mages have non-mage subjobs. It's really up to you...and I have no clue how Dancer is gonna work in Wotg so maybe you should look at it...
anyway anything that Dual Weilds has NIN in it somewhere...and THF is the job that totally gets away with Daggers, Sneak attacks and Trick attacks...
