what exactly is a meatshield? I hear people talk about it but I do not know what it is exactly.

it means and shield made of meat. And meat = 1 of your friend's body.

example scenario.
A mage casting magics from behind a Paladine. All incoming attacks go to the PLD.
So in this case, the PLD is a meat shield for the mage
