Personally I did Ogre Eels for a while after Nebimonite, but that was before you had to fight the fish. Now you can probably skip straight to Shall Shells for money and skillups. There's actually a fair number of experienced fishermen on this site, but as Taskmage noted, the place to get the best answers is definitely at Titanictus.com.
EDIT: As far as gil fish, you could try fishing for Cone Calamary. They're somewhat lower level than Shall Shell, somewhat more active on the rod, but also not in an area that's full of junk items, and they're somewhere in the mid-40s range. Another possibility if you have a LOT of inventory space is Gugru Tuna. It sells fairly well, but is a large and unstackable fish, but caps at level 41.
Personally, I fished for Dark Bass (33) / Giant Catfish (31) / Red Terrapin (53) in La Theine Plateau's small pond around L-10. You can probably use a Halcyon and Frog Lure if you'd like to try that (but be warned you won't make much money at it).
If you haven't got your Lu Shang's yet, another option is to just fish for Moat Carp and Sandfish (51) using Insect Paste in Rabao.

I'm a fellow fisher as well and wanted to say hi to you all! I guess the recent IGE/Alla fiasco has made this place a busy hub of activity.

After Nebs, I stayed on the ferry and switched to using minnows/sinking minnows and went after cone calamary. While they cap out pretty high, a friend of mine with fishing skill of 9 has been bringing them in quite easy and you will get noble ladies and blues mixed in. All sell pretty well on my server, though I used the calamary to skill cooking by making sushi.
