Because the IOC (international olympic committee) does not control what is shown. They give those rights to various broadcasting companies around the world, like NBC for the US and BBC for the UK. Those companies have full digression as to what is shown and where. NBC has the games online, but you need to be a cable subscriber with one of 149 companies (though only the major 20 work well I hear) with a certain level of subscription. There are ways around it, but I'll let someone more tech savvy help you there.
