If you insist on mining up your own ore, try Zeruhn or Palborough.  Lyonheart

Do as you want with the Copper Ore; situationally I may make Copper, Bronze, or Brass Ingots if I have a particular need, but a lot of the time it's best just to toss them when they start to pile up. With crystals on-hand you can process ore as soon as you have enough, leaving only to buy more crystals or pickaxes or to trade/sell accumulated Zinc and/or Darksteel Ore.
I haven't spent much time mining in Palborough, though I didn't have as much luck there when I did. Kumei, pickpocket of Midgardsormr (Bastok, Rank 7)

1 nothing.
4 Iron ore (sell on AH due to smithing low in crafting)
3 Copper ore (made copper ingot)
