ok ive read over tons of guides for Beastmaster, in all the guides they say to convert mobs to EM, now it might be a newb question or i might i missed it, but how in the world does a BST convert mobs to EM?

Kill them or zone them until they re-pop as EM. Edit: Or Tame Leave, outside of their spawn range, so that they'll de-pop when they lose aggro.

Odd, you missed out the simplest method ... if the guide is telling you to convert pets (like all guides do, never target prey from what I gathered) you should charm the pet, run outside their spawn range, and use Leave. Then wait 1 minute as they repop and check them again, if it's your desired level (EM or DC) then you can use this pet for your the duration of your EXP session, unless you kill it in battle or leave it outside its radius.
