In a good skill up party/alliance, everyone who comes along will take responsibility for their own healing. Usually, this means DD jobs sub WHM or RDM. Big problems arise if a majority of the DDs don't take responsibility to share in the task of healing, and that puts all the burden of healing onto the 1 or 2 mages who happen to come along. If you happen to go on a skill up as a mage, I suggest being very assertive about subjob selection before leaving town.
If you have enough people in the alliance, and the fights are relatively safe, you should make sure and equip a low delay, low damage weapon, preferably one with a +acc bonus. The longer the mobs lives, the better off you'll be. I went to do skill ups in Boyahdo Tree as a level 68 WAR, surrounded by level 75s. I didn't bother bringing a weaker GAxe with me, and instead just used my Berserkers Axe. The end result was that I pulled hate quite a few times, and go one shotted by a Goobbue. If you don't intend to tank, don't bring the highest damage weapon.

Besieged skill ups is very iffy. It wasn't until I was level 72 with 235-ish GAxe skill that I started to get reasonable amount of skill ups at Besieged. Even with a ton of +acc gear and Sushi, I had a tough time hitting mobs (and still do even now at times). If I'm not completely whiffing against one mob type, I'm hitting for 0s against another.
For safe skill ups in the 200+ range, I strongly suggest trying out the
Excavation Duty assault. The only thing it will cost you is an assault tag, which won't hurt you unless you constantly do assaults. Just grab two friends who don't really care about finishing that particular assault, and go to town on Brittle Rocks. I got skill ups from them recently at 238 GAxe skill.
