For the vast majority of quests/missions that take the form of "Bring me X amount of item Y", yes.
There are a few cases where the NPCs will auto-detect certain items in your inventory, but by and large if you want to show or give something to an NPC, use the Trade window (oh, and make sure it's an NPC and not a player - that can be confusing if you do it by accident
).
